Instructions
First, slice chicken sausage into preferred pieces. I recommend slices sausages in half then cut into ½ inch wide pieces to improve cooking time.
Next in a large skillet on medium heat, add 1 tablespoon sun dried tomato oil to pan.
Add chicken sausage to pan and cook until browned.
Once the chicken sausage has been cooked, remove from pan and set aside.
Turn heat down to low/medium and then add 2 tablespoon salted butter to pan with minced garlic. Add dry gnochhi to pan and cook for 4-6 minutes until the melted butter has an even coat on the gnocchi.
Once gnocchi is cooked, turn heat down to low, add cooked sausage back into pan, sun dried tomatoes, chicken broth, seasonings, tomato paste, and heavy cream.
Stir until well combined.
Next, add grated parmesan cheese, and chopped spinach. Let it simmer for additional 10 minutes to enhance the flavors.
