1 8x8 baking pan
1 Mixing bowl
Ingredients
2 ½cupsrolled oats
⅓cupbrown or white sugar
1cupblueberriesfresh or frozen
1tablespoonflour
1teaspoonbaking powder
1teaspoonhoney
1cuppeanut butter
1teaspoonvanilla extract
¼cupplain greek yogurt
2room temperature eggs
1 ½cupsmilk
chocolate chips
1tablespoonflaxseed
Instructions
Preheat oven to 350 degrees.
In a mixing bowl, combine all ingredients listed above except blueberries and flour.
In a separate small bowl, coat blueberries in flour. Make sure it is evenly coated. This will help prevent the blueberry from sinking to the bottom of the baked oatmeal.
Spray 8x8 pan with olive oil spray, and add mixture to pan.
Spread evenly & add chocolate chips on top.
Bake for 35-40 minutes uncovered. Let it rest for 10-20 minutes after.
