EASY BLUEBERRY BAKED OATMEAL

If you are looking for an easy breakfast that is filling, and perfect for meal prep, this blueberry baked oatmeal is one of my favorite recipes to make. It comes together with simple pantry staples, takes just a few minutes to prep, and makes busy mornings so much easier.

As a mom, I love having breakfasts ready to go during the week, especially on hectic mornings. This blueberry baked oatmeal is soft, naturally sweet, packed with juicy blueberries, and tastes delicious warmed up the next day. It feels like eating a comforting baked treat, while still being a filling and wholesome breakfast option. If you love this recipe, you need to try my Cookie Butter Overnight Oats.

Delicious: The naturally sweet flavors of the blueberry, vanilla, honey, along with the oats, make this a delicious and filling breakfast option my kids always love.

Family-Friendly: This recipe is very popular with my family! I usually make this 2-3 times a month as an easy on-the-go breakfast option.

INGREDIENTS

  • Oats: Rolled oats create the hearty texture of the baked oatmeal. I recommend avoiding quick oats, since they tend to get more mushy.
  • Blueberry: Fresh or frozen blueberries add a great and fresh flavor to this breakfast.
  • Vanilla: enhances the flavors in the baked oatmeal to give it that sweet flavor.
  • Dairy: Milk and greek yogurt are used in this recipe.

HOW TO MAKE THIS BLUEBERRY BAKED OATMEAL

First, preheat oven to 350 degrees.

Then in a mixing bowl, combine all ingredients listed above except blueberries and flour.

Next, in a separate small bowl, coat blueberries in flour. Make sure it is evenly coated. This will help prevent the blueberries from sinking to the bottom of the baked oatmeal.

Spray 8x8 pan with olive oil spray, and add mixture to pan.

Spread evenly & add chocolate chips on top.

Finally, bake for 35-40 minutes uncovered. Let it rest for 10-20 minutes after.

TIPS AND TRICKS

Leftovers: Any remaining leftover blueberry baked oatmeal can be stored in an airtight container in the refrigerator for up to 4 days.

Oats: For this recipe, I recommend using rolled oats instead of quick oats. Quick oats can get mushy and affect the texture of the breakfast bake.

Blueberries: Fresh or frozen blueberries are used. However, I recommend coating the blueberries with flour to help prevent them from sinking to the bottom of the pan when baking.

  • 1 8x8 baking pan
  • 1 Mixing bowl

Ingredients
  

  • 2 ½ cups rolled oats
  • ⅓ cup brown or white sugar
  • 1 cup blueberries fresh or frozen
  • 1 tablespoon flour
  • 1 teaspoon baking powder
  • 1 teaspoon honey
  • 1 cup peanut butter
  • 1 teaspoon vanilla extract
  • ¼ cup plain greek yogurt
  • 2 room temperature eggs
  • 1 ½ cups milk
  • chocolate chips
  • 1 tablespoon flaxseed

Instructions
 

  • Preheat oven to 350 degrees.
