These No Bake White Chocolate Energy Bites are the perfect midday sweet treat that is filling and so delicious! Made with rolled oats, creamy peanut butter, honey, and white chocolate chips. These only take five minutes to make and are a weekly snack staple in our home!

EASY FIVE MINUTE NO BAKE ENERGY BITES

I started making these years ago as an easy meal prep snack option, and has now become a weekly request with my entire family. They are simple, soft, chewy and the perfect midday treat when you are wanting some that is healthy and filling. This is one of those five minute snacks that you make once, and find yourself grabbing for one every day that week. I love how versatile these are, and completely customizable based on what flavors you're craving that week!

WHY YOU'LL LOVE THESE WHITE CHOCOLATE ENERGY BITES

Healthy & Filling: These energy balls are made with rolled oats, flaxseed, peanut butter and honey as the foundation of this recipe. Filled with fiber, and natural sweeteners that will leave you full and satisfied in between meals. Great for meal prep.

Customizable: For this recipe, I added white chocolate chips and Valentine's day themed sprinkle to make this even more fun and festive for my kids! I love how versatile this recipe is, because you can customize with any type of chocolate chips or holiday-themed sprinkles like Christmas, Halloween, 4th of July, or even St. Patrick's Day to make them a fun treat for your kids. You can also swap the peanut butter for an alternative nut butter.

Family-Friendly: My kids absolutely love snacking on these during the day. They are filling and so tasty. I like to pack these for when I'm out running errands, traveling, or packing extra snacks in their lunch.

INGREDIENTS

  • Rolled Quick Oats: The quick rolled oats provide the soft chewy texture of the energy bites, which is also a great source of fiber. I prefer using quick oats versus old fashion oats, because it tends to be more crumbly.
  • Creamy Peanut Butter: Acts as a binder and base for these snacks. I love the flavor of creamy peanut butter in this recipe. However, you can substitute for any alternative nut butter or crunchy peanut butter.
  • Honey: Acts as a binder and a natural sweetener for the energy balls.
  • Vanilla Extract: Adds extra flavor to avoid the bland flavoring of plain oats.
  • Ground Flaxseed: Adds extra fiber and helps make the snack even more filling.
  • Lily's No Sugar Added White Chocolate Chips: To keep this as a low sugar option, I used lily's no sugar added white chocolate chips.
  • Sprinkles: Adds a fun and festive touch to the snack.

HOW TO MAKE NO BAKE WHITE CHOCOLATE ENERGY BITES

First, in a mixing bowl, add oats, and ground flaxseed.

Then add peanut butter, honey, vanilla extract, sprinkles (optional)

Next, you'll stir the ingredients together and add white chocolate chips.

Then you'll make each energy bite into 1 inch round balls.

Place in airtight sealed container in the refrigerator for 2-4 hours to help it set.

TIPS AND TRICKS

Substitutions: These no bake energy bites are completely customizable, so you can easily swap out different chocolate chips.

Storage: I like to snack on these throughout the week and recommend keeping these easy snacks in an airtight container in the refrigerator for up to 1 week.

Nut Butter: If you do not like peanut butter, you can swap for a different nut butter such as almond or sunflower.

Protein Powder: Protein powder can be mixed into the dry ingredients prior to adding in the liquid base of the foundation. However, it may alter the consistency of the energy bites. I recommend adjusting the amount of honey and/or peanut butter to make sure it does not have a chalk-like consistency from the powder.

Ingredients
  

  • 3 cups rolled or quick oats
  • 1 cup creamy peanut butter
  • ¼ cup honey
  • 1.5 teaspoon vanilla extract
  • 2 tablespoon ground flaxseed
  • ¼ cup lily's no sugar added white chocolate chips
  • sprinkles

Instructions
 

  • in a mixing bowl, add oats, and ground flaxseed.
  • then add peanut butter, honey and vanilla extract. (spray measuring cup prior to measuring peanut butter and honey to help prevent it from sticking too much)
  • stir together. then add white chocolate chips and sprinkles.
  • make each energy bite into 1 inch round balls.
  • place in airtight sealed container in the refridgerator for 2-4 hours to help it set.
  • makes about 18-20 energy bites.
