This easy Taco Biscuit Bake casserole is creamy and delicious and a huge family favorite that we absolutely love! Made with ground beef, cheese, vegetables, and biscuit dough. Simple ingredients, budget-friendly, and one of our go-to easy dinners that will quickly be added to the weeknight dinner rotation!

EASY BUBBLE UP TACO CASSEROLE RECIPE

This family-friendly recipe is such a fun twist on your average Taco Tuesday. I started making this for my family for those busy weeknights when I wanted to have dinner on the table in under 30 minutes, but not have another night of simple ground beef tacos. An easy way to add some vegetables into the taco biscuit casserole without my kids noticing, and they absolutely love it! Easily one of our family meals that's on our monthly dinner rotation.

WHY YOU'LL LOVE THIS TACO BISCUIT BAKE

Budget-Friendly: Made with easy and simple ingredients can be staples in your pantry.

Family-Favorite: My family absolutely loves having this for our Taco Tuesday weeknight dinner rotation. Its easy to make and has so much flavor!

Delicious: The flavor combination of this biscuit bake are so fun and full of unique flavors. The traditional taco flavors mixed in with cream cheese, and topped with biscuit dough make it the perfect easy dinner recipe. Top with sour cream, salsa, and shredded lettuce, and it is absolutely delicious!

INGREDIENTS

  • Ground beef: I like to use ground beef for this recipe. However, you can substitute for ground turkey or chicken
  • Plain cream cheese: Adds a creamy texture to the biscuit bake.
  • Rotel tomatoes with green chilies
  • Biscuit dough: I used pillsbury biscuit dough for this recipe. However, you can use any store brand. Adds the delicious fluffy texture of the casserole.
  • Vegetables: white onion, bell peppers
  • Seasonings: the seasonings used in this recipe include salt, pepper, italian seasoning, garlic powder, onion powder, paprika
  • Taco seasoning packet: used for ground beef.
  • Shredded cheese: adds the perfect cheesy element for the recipe

HOW TO MAKE TACO BUBBLE UP CASSEROLE

In a skillet on medium heat, add olive oil and diced white onion to pan. Then you'll add ground beef and cook thoroughly.

Add seasonings, cream cheese, rotel tomatoes and diced bell peppers to skillet and stir together. Turn off heat and set aside.

Preheat oven to 350 degrees. In 13x9 pan, add ground beef mixture to bottom of the casserole pan.

Then add layer of freshly shredded cheese.

Lastly, you'll add the final layer with cubed biscuit dough.

Cook for 15-20 minutes.

TIPS AND TRICKS

Biscuit dough: For this recipe, I used Pillsbury flakey biscuit dough. However, you can substitute with any brand that you have available.

Substitutions: If you want to make a higher protein option to swap for the cream cheese, you can add cottage cheese. It's a great alternative that still gives a creamy texture!

Cheese: For this recipe, I used freshly shredded colby jack cheese. You can also use preshredded cheese. If you do not have colby jack cheese available, you can substitute for mexican style or cheddar cheese. All of these will provide great flavor to the dish!

Equipment

  • 1 13x9 pan
  • 1 medium skillet

Ingredients
  

  • 1 lb lean ground beef
  • 1 block plain cream cheese
  • 1 can rotel tomatoes with green chilis
  • ½ cup diced white onion
  • 2 bell peppers
  • one 8 count premade biscuit dough
  • taco seasonings
  • shredded mexican style cheese

Instructions
 

  • in a skillet on medium heat, add olive oil and ½ cup diced white onion. cook until translucent.
  • Once onions are translucent, add ground beef. cook thoroughly until brown.
  • add taco seasoning, diced bell peppers, rotel tomatoes and softened cream cheese. Combine together.
  • turn off heat and set aside.
  • preheat oven to 350 degrees.
  • In a 13x9 pan, add ground beef mixture to the bottom of the pan.
  • layer with cheese.
  • dice premade biscuit dough into ¼ pieces and add on top of cheese.
  • bake for 15-20 minutes or until dough is cooked thoroughly.
