Italian Sausage Gnocchi Soup
This is the soup I make when someone in our house is having a rough day. It's warm and creamy and honestly just feels like a hug in a bowl. My kids ask for it by name and that tells you everything you need to know.

This is a bowl of sautéed Italian sausage with onions and garlic, spiced up and simmered in bone broth with gnocchi cooked directly in the pan. Then, you add heavy cream and grated Parmesan cheese to make everything into a very tasty and creamy soup. The spinach is added last of all. Ten more minutes on low heat, and it's ready. It's a soup that will fill your kitchen with its amazing aroma and will taste even better.
Why You'll Love This Recipe
Everything cooks in one pot. The sausage, the broth, the gnocchi, the cream - all in the same pot and minimal cleanup afterward.
The gnocchi cooks right in the soup and soaks up all that Italian sausage and Parmesan flavor while it cooks. No separate pot of water needed.
It's incredibly creamy and rich but the bone broth and tomato paste underneath keep it from being one-dimensionally heavy. There's actual depth to this soup.
It feeds six people and tastes even better the next day. This is a meal prep soup if you've ever seen one.
Ingredients Needed To Make Italian Sausage Gnocchi Soup
The Base
Mild Italian sausage seasons the entire soup as it cooks and releases its fat into the broth which adds incredible flavor. Yellow onion and minced garlic build the aromatic foundation. Tomato paste adds a concentrated depth that makes the broth richer without tasting like tomato soup.
The Broth and Cream
Bone broth adds more body and nutritional depth than regular broth. Heavy cream stirred in after the gnocchi cooks turns the whole thing into a creamy, silky soup. Freshly grated Parmesan melts in and adds a salty, nutty finish throughout.
The Gnocchi and Greens
Dry potato gnocchi goes straight into the simmering broth and cooks in 2 to 3 minutes. Fresh spinach chopped and folded in at the very end wilts quickly and adds color and nutrients without turning army green and sad.
How to Make Italian Sausage Gnocchi Soup
Step 1: Build the Base
Heat a drizzle of olive oil in a large pot over medium heat. Add the diced onion and cook until soft and translucent. Add the garlic and stir for 30 seconds. Add the Italian sausage and break it apart as it browns.
Step 2: Season and Add Broth
Once the sausage is cooked through, add the tomato paste and all the seasonings (salt, pepper, Italian seasoning, oregano, parsley, garlic and onion powder, and crushed red pepper if using). Stir until everything is evenly coated. Pour in the bone broth and bring to a boil.
Step 3: Cook the Gnocchi
Add the dry gnocchi directly to the boiling soup. Cook for 2 to 3 minutes until just cooked through.
Step 4: Add the Cream and Cheese
Reduce the heat to low. Stir in the heavy cream then add the grated Parmesan and stir until fully melted and the soup is smooth and creamy.

Step 5: Add Spinach and Simmer
Fold in the chopped fresh spinach. Let the soup simmer on low for 10 minutes to thicken slightly and let all the flavors come together. Serve immediately.
Storing and Reheating
Store in a sealed airtight container in the refrigerator for up to 4 days. The gnocchi absorbs the broth as it sits and the soup will be thicker the next day. Just add a splash of broth or cream when reheating to loosen it back up. Reheat on the stovetop over medium-low heat stirring occasionally or in the microwave on medium power in 60-second intervals.
How to Serve Italian Sausage Gnocchi Soup
Serve in big bowls with extra Parmesan grated over the top and a good piece of crusty bread alongside for dunking. A sprinkle of fresh parsley or red pepper flakes on top makes it look like you really finished the dish. This soup is a complete meal on its own but a simple green salad alongside is never a bad idea.
Frequently Asked Questions About Gnocchi Soup
Can I use spicy Italian sausage instead of mild?
Absolutely. Spicy Italian sausage adds a kick that works really well with the creamy broth. The cream actually helps balance the heat so it's not overwhelming, it just adds a nice warmth throughout the soup. If you want the heat but not too much of it, do half mild and half spicy.
Can I use fresh gnocchi instead of dry?
Yes but adjust the timing. Fresh gnocchi cooks even faster than dry (usually just 1 to 2 minutes). Watch it closely because overcooked gnocchi turns soft and falls apart in the soup. Dry gnocchi holds up a little better through the simmering time at the end which is why it's specifically recommended here.
Why use bone broth instead of regular broth?
Bone broth has more protein, collagen, and a richer, more complex flavor than regular chicken or beef broth. The collagen also helps the soup develop a slightly thicker, more luxurious texture as it simmers. Regular broth works fine if that's what you have, the soup will just be slightly less rich.

This is excellent, thank you!
I might add some celery and/or shredded carrots (maybe bell pepper?) next time.
Very rich and tasty! I traded out the spinach for kale (we like the cronch), and I think I might do chicken or ground turkey next time (I've never been a big sausage person). But certainly going in the cookbook!
We're only a couple weeks into soup season, and I've already made this twice - once exactly as written and once where I just added some aging veggies from my fridge. Both times it turned out perfectly! Thank you so much for the recipe.
Excellent recipe! As others have said - it is very easy to adapt and make it your own. I did half Italian sausage and half ground turkey. I did use beef broth and put in more like 3 cups. I also upped the spinach. And used 2-3 tbsp tomato paste. I also added almost half a jar of the Trader Joe's brushetta to up the tomato flavor. Delicious!
question - 1 tsp each of garlic powder and onion powder or is it 1 tsp of (garlic and onion) powder.
steve
yep! 1 tsp of each
I love this recipe! Easy to customize as well! I replaced the pork sausage with jimmy dean raw turkey sausage and I used the cauliflower gnocchi from trader joes (I pre-seared it until it was golden brown on all sides so it didn't dissolve in the soup). I also blended a cup of full fat cottage cheese with the bone broth and only used 1 cup of light cream instead of two cups of heavy cream and it was still fabulous and delicious! My fiance was obsessed and is asking me to make it again!
The recipe was amazing. To make a bit more soupy added more chicken stock and did kale instead of spinach. Simply outstanding and absolutely restaurant quality. Perfect on a rainy fall day. Thank you!
oh my gosh this soup!!!!! I'm in London, UK and I really don't know how your recipe came up but I'm so grateful it did! My husband is recovering from surgery, is miserable as anything and I was hoping your soup would cheer him up. And boy did it!!!!!!! It is AMAZING. Wow!
Oh my this is so delicious!! Will definitely make this over and over again! My daughter can’t stop saying how good it is.
Made this for a girl's night watching DWTS and we were all obsessed!! Sooo good!
One of the best soups I've ever had! Definitely restaurant quality. I will definitely make again!! Made exactly as written. Highly recommend!!
This is amazing!
Where I live, they don’t sell Italian sausage, so I made my own using ground chicken.
It worked like a charm with this recipe!
Definitely adding this to the rotation!
Thank you so much❤️
I made this soup this week and it was absolutely delicious!! me and a coworker share recipes and when I was telling her about this soup another coworker overheard and was very interested in the recipe. I ended up sharing it with my whole team😄 This was very easy to make it all came together pretty quick and again it's tastes phenomenal!!! Will absolutely make it again!
love that! so happy you all enjoyed it! thank you for sharing 🙂
I just made this and it is SO good!
Really loved it. So yummy
Thank you so, so much for creating! It is by far (this according to my husband) the best soup I have ever made, and I agree. It seems so simple, but the balance of ingredients makes it as close to perfect as one can get.
I prefer not to use pork, so, the second time made, I used just one Italian sausage (removed from its casing), to give it a boost of flavor. I then doubled the tomato paste for extra umami. I can think of so many variations using the recipe as a base - different meats or none, adding mushrooms or other vegetables, doubling the gnocchi or … you get the idea. Thanks again!
My entire family loved the recipe; it is definitely a keeper! I did reduce the cream by about a half cup and used hot Italian sausage and it was great. One suggestion I would make is to list your ingredients in the order they go in the recipe. This is pretty typical. That way when someone is following the directions they can easily check off the ingredients as they go.
This was so yummy and flavorful! Will definitely be making again. Thanks for the recipe! 😊
Do you think frozen gnocchi like the one from Trader Joe’s would work?
i believe it would!
I made this today, 10/10!!! I subbed chicken broth but the flavors were still amazing. Love this recipe!
THIS WAS SO GOOOD! and for a girl just learning how to cook this recipe was very easy to follow! this has also made more confident to start cooking other meals 🙂
Ok—-NO JOKE! This is by far the best thing I’ve ever tasted in my life!!!! So excited for dinner!!!! ;)))
This is so verify yummy!! do you have nutritional information for this soup?
Wow 🤩 This is one of the best soups I have ever had! So glad I found you on Instagram!!! I used kale because I didn’t have spinach and it was phenomenal!
Can’t wait to try more of your recipes
Thank you
Chef’s kiss! 10/10!!!
Ok… I don’t eat pork so I made this with turkey sausage. Oh the flavor! So delicious. Saved as a favorite and forever on dinner/party rotation!!! Thank you for sharing! Yummmm
Omg so delicious! Will have to double the recipe next time because I keep going back for more :). I subbed leeks for the onions because I tolerate those better but have no doubt it would be phenomenal either way.
This is the second time I made this soup in a week! It is a new family favourite, and I will be serving it to company this fall and winter as well. I just add a little bit of chicken broth on day two to thin it out a little. Thank you for sharing such a delicious recipe!
you're welcome!! 🙂
This is one of the best soups I've ever had. My husband says it IS the best soup he's ever had and this is his favorite soup now. It was SO easy and fast to make (took about 40mins from start to finish). It has so much flavor and is very filling. We will be making this a lot going forward
wow thank you so much!! 🙂 so happy you both enjoyed it!
Holy wow this was so easy, and tasted so so good.
Meghan - thank you!!
This was so delicious. My 11yo cooked it with me (did most the work herself) & I cannot tell you how excited she was to realize that she could make this 'restaurant style' soup. 12/10. We'll definitely be making it again. We followed the directions as listed & it came out perfect.
aw I love that you cooked it together! That is truly so special!! So happy you enjoyed it 🙂
I just made it and it's delicious and I'm no cooking wizard. I substituted coconut milk for the half and half. Thank you so much Meghan.
you're welcome! so happy you enjoyed it!
I was wondering what a non lactose sub would be. I’m glad you tried out coconut milk and liked it. Good to know. I
This soup was amazing! My whole family loved it. I did add some fresh basil and chives from my garden, but that was the only change I made. I love fresh herbs and have an abundance so I try to use them when I can. 🙂
Very good but didn’t need equal portions broth/cream. Could have used 3/1 ratio even. It was a little too rich, but VERY good. Just going to add in more broth, into our leftovers.
I also didn’t double the onion, which I think was fine. But doubled everything else. Thank you!
Soooo good! I love an easy and delicious dinner like this. I ended up adding mushrooms and used 4 cups of bone broth. Really nice meal, thank you for sharing.
this was AMAZING soup. So delicious, easy and everyone in the family loved it. I don't normally make soup either! Thank you!!!
loved it. thank you for this delicious recipe!
This recipe was wonderful! I used mini gnocchi and topped with mozzarella, and it was delicious.
Thank you for sharing!
This recipe is phenomenal. It makes me feel like I have a restaurant level dish at home. The store did not have gnocci so I used cheese tortellini.
This came out insanely good! Definitely adding to our soup rotation
Honestly the best soup I’ve ever made in my 10 years of making soups!
thank you so much!! 🙂
Super yummy! It was just the right amount of spicy, creamy richness! I’ll be making again!! Thanks!!
Seriously, such an easy recipe to follow & it taste absolutely delicious! Im glad I stumbled upon it on Instagram. I will be trying more recipes in the future 🙂 thank you again!
thank you so much!!! that truly means a lot! 🙂
I have never ever ever commented on a recipe before but this might legitimately be my new favorite soup.
thank you so much!! 🙂 so happy you enjoyed it!!
10/10....... delish.... I gave leftovers to my neighbors and they raved about this. The only change next time ( this fall) will be I'll be making bread bowls and serve in them
love the idea of the bread bowls! thank you for sharing!
Absolutely delicious - hubby agreed, one of the best soups I've ever made!
Hello! From Aus here- in the video looks like you've used ground beef or pork? Or did you take the sausage out of the casing?
looks amazing!
hi! no, in the US, some italian sausage doesn't come in a casein. you can remove the casein for the italian sausage if that is how it is prepared in Aus 🙂
AMAZING - Best soup I have ever made! So good, luckily this makes enough for 5 meals.
This soup was delicious!!
Amazing soup! My husband is not a soup person at all but I caught him on his third spoonful before it had cooled. (I tripled the garlic, and doubled the tomato paste and seasoning) this will be a new staple for me. Found the soup on insta and made my way here.
What are the bits of red in your finished soup? I see you put in the tomato paste but that usually melts down, trying to make sure I have everything. Thank you
Hi! its crushed red pepper flakes. They are optional depending on your spice tolerance
This is a phenomenal soup! Will be making again. Thanks for the great recipe.
you're welcome! so happy you enjoyed it!
Looks delicious! what kind if Gnocchi do you use?
Hi! I use the Delallo pasta brand for gnocchi 🙂
Do you think this could be done with a turkey sausage? I am Muslim and it is very difficult to find halal sausages.
yes it can! you may need to adjust the spices a bit since the italian sausage has additional seasonings in it, but i think it would work well with turkey sausage.
Thank you so much!
I tried it out with some turkey Italian sausage I found and it came out SO good. It’s well into the 90s everyday here in Texas but I was craving something comforting and it definitely hit the spot. This will be a repeat recipe in our home now 😍
Can this be done in the crockpot?
it can be done in the crockpot, however i recommend cooking the italian sausage and onions first before adding it to the slow cooker. then cook on low for 2-3 hours.
Great recipe!
I live in Russia so we dont have Italian sausages in our stores, so I made this delicious soup with seasoned ground pork, added sundried tomatoes.
Also i believe that it would be great to cook this soup with potatoes instead of gnocchi. Both ways its beautiful.
Thank you! Can’t wait to make this!!
Can you use half and half cream rather than heavy cream?
yes you can 🙂
