QUICK AND EASY MONGOLIAN BEEF BOWL

This is one dinner my family asks for on repeat. On nights when I don't have the energy, I always lean on quick, family-friendly meals like this. The aromas of the ginger, soy and garlic, give it such amazing flavor! Plus, it's a great for easy meal prep during the week. One of my favorite healthy, weeknight meals I like to keep for days when I really don't have much time in the kitchen. In you love this recipe, you need to try my Beef and Rice Enchilada Skillet.

WHY YOU'LL LOVE MONGOLIAN BEEF BOWL

Quick & easy: Minimal prep and one-pan cooking makes this perfect for busy nights.

Family-friendly: Mild flavors and tender ground beef make it a hit with kids and adults.

Delicious: Rich, garlicky sauce that tastes better than takeout. I love pairing this meal with broccoli, green onions and jasmine rice.

INGREDIENTS

  • Ground Beef: I recommend using lean ground beef or lean protein option, such as ground turkey or chicken.
  • Vegetables: Onions, green onions, broccoli and carrots add great texture and flavor to the recipe.
  • Seasonings: The seasonings used include salt, pepper, garlic powder, onion powder, sesame seeds, crushed red peppers, ginger paste and minced garlic.

HOW TO MAKE EASY MONGOLIAN BEEF BOWLS

  • In a large skillet over medium heat, add sesame oil to pain and cook onions and ground beef.
  • Add minced garlic and stir.
  • In a separate bowl, combine soy sauce, brown sugar, seasonings, rice vinegar, ginger paste and slurry mixture together.
  • Turn heat down to low on skillet, and add mixture.
  • Add vegetables and let it simmer for 10-15 minutes covered.
  • Serve over rice with green onions and sesame seeds on top.

TIPS AND TRICKS

Leftovers: Leftovers can be stored in an airtight, sealed container for 3-4 days in the refrigerator. This quick and easy mongolian beef bowl is a great meal prep option to have during the week.

Protein: I recommend using lean ground beef to help decrease the amount of grease in skillet. You can also substitute ground beef for ground turkey or chicken.

Brown Sugar: If you are looking for a healthier alternative to the brown sugar, I recommend using Swerve's brown sugar substitute. It has less of the sugar amount, but still provides that delicious sweet flavor!
