One of my favorite ways to make dinner in the summer time is by using the crockpot. I love a good slow cooker recipe, and this is truly one of those set and forget kind of meals that we have on the dinner rotation. Perfect for busy moms who don't have time or feel like cooking some days. Same great flavor with minimal effort.

INGREDIENTS
- Chicken Breast: about 2 lb of chicken breast is used in this recipe. Chicken thighs can be substituted.
- BBQ Sauce: I love the smokey flavor of the Sweet Baby Ray's Honey Chipotle BBQ sauce. Makes a quick and easy option to save time on prepping dinner.
- Onion: Diced yellow onion provides a sweet balance for the smokey bbq sauce.
- Seasonings: Salt, pepper, garlic powder, onion powder, smoked paprika, and minced garlic provide the rich flavors for this crockpot dinner.
HOW TO MAKE SLOW COOKER HONEY CHIPOTLE BBQ CHICKEN



First, add chicken breast to bottom of crockpot. Next add ⅔ of the honey chipotle bbq sauce bottle. Reserve the rest for after the chicken is cooked.
Next, add diced yellow onion and seasonings listed. Cover with lid, and cook on high for 2.5-3.5 hours or 4-5 hours on low.
Once chicken is cooked, turn temperature down to warm. Remove chicken from crockpot and shred chicken to desired consistency.


Then, place the chicken back in the crockpot and pour the remaining sauce over the top.
Top with shredded white cheese (mozzarella, monterray jack, or white cheddar).
Once it's ready, spoon it over diced potatoes, mashed potatoes, or rice - or pile it onto sandwiches and sliders.

TIPS AND TRICKS
Serving: I love to serve the Crockpot Honey Chipotle BBQ Chicken over mashed potatoes, diced potatoes, rice, sandwiches or quesadillas. A great versatile dinner that can be served different ways, making it a great meal prep option for those busy weekdays.
Leftovers: Store leftovers in an airtight container in the refrigerator for 3-4 days.

Equipment
- 1 6 qt slow cooker
Ingredients
- 18 oz Sweet Baby Ray's Honey Chipotle BBQ sauce 1 bottle
- 1.5-2 lb chicken breast
- 1 tablespoon minced garlic
- salt & pepper to taste
- 1 teaspoon smoked paprika
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- ½ cup diced yellow onion optional
Instructions
- First, add all chicken breast to bottom of crockpot.
