Sheet Pan Ranch Chicken Sausage and Potatoes
I make this at least once every two weeks, as it takes virtually no thought at all and my entire family enjoys this dish with no grumbling. During hectic weeknights, it's a lifesaver to get dinner on the table so much faster!

All you have to do is throw everything into a single bowl, coat it in butter and ranch, spread it on a sheet pan and bake it in the oven for 40 minutes. It's essentially chicken sausages, baby potatoes, and bell peppers baked all together till the potatoes are tender and the vegetables have developed some caramelized edges. And finishing it off by putting Parmesan cheese on top straight out of the oven.

The Proteins and Vegetables
Chicken sausage links sliced into rounds are the protein, and they are already fully cooked so they just need to heat through and get some color. Baby yellow potatoes cut into bite-sized pieces roast up tender with slightly crispy edges. Bell peppers in any color combination add sweetness and color throughout the pan.
The Seasoning
A full stick of melted salted butter coats everything and is what makes this taste so indulgent for so little effort. One packet of ranch seasoning does all the flavoring work. Garlic powder and onion powder add extra depth. Salt and pepper finish it off. Freshly grated Parmesan over the top when it comes out of the oven is the finishing touch that makes it feel complete.
How To Make Sheet Pan Ranch Chicken Sausage and Potatoes
Step 1: Prep
Preheat your oven to 375 degrees F. Dice your baby potatoes into bite-size pieces, slice your bell peppers and cut your chicken sausage into ½-inch pieces. Add all the ingredients into a big bowl.


Step 2: Season
Add melted butter on top of everything in the bowl. Add ranch seasoning package, garlic powder, onion powder, salt and pepper. Mix everything to make sure that each piece of potatoes, bell peppers and chicken sausage is coated with butter and seasoning.
Step 3: Roast
Evenly spread all the ingredients on a big sheet pan. You do not want to pack them; you need room for roasting, not steaming. Roast all the ingredients for 35-40 minutes in your preheated oven at 375 degrees F until potatoes are tender and other ingredients have brown edges.
Step 4: Top and Serve
Once they are roasted, take the pan out of the oven and immediately top with grated or sprinkled Parmesan cheese. Enjoy!

Storage and Heating
Store in an airtight container in the fridge for up to 4 days. Heat in the air fryer at 375°F for 5 to 6 minutes for the potatoes to regain their crispy nature, or in the oven at 375°F for 10 minutes. This also can be heated in the microwave but, overall, it will lose its crispiness.

What chicken sausage works best?
The Kirkland Cracked Pepper and Parmesan chicken sausage from Costco is specifically great here and what I use. The cracked pepper and Parmesan flavor pairs really well with the ranch seasoning and the Parmesan garnish at the end. Any fully cooked chicken sausage works though, Italian style, apple and gouda, spinach and feta, whatever you like or have on hand.
Can I use regular potatoes instead of baby potatoes?
Yes. Yukon Gold or russet potatoes cut into similar bite-sized pieces work fine. The cook time stays the same. Baby potatoes are specifically nice because you don't have to peel them and they roast evenly, but any potato cut into 1-inch pieces will get you to the same place.
Why is my pan overcrowded and how does it affect the result?
When too many ingredients are packed onto a sheet pan the moisture released during cooking has nowhere to go and everything steams rather than roasts. Steamed potatoes and peppers are soft and pale. Roasted ones have golden caramelized edges and a much better texture and flavor. Use the largest sheet pan you have and spread everything out as much as possible. Use two pans if needed.
Can I add other vegetables?
Yes. Broccoli florets added in the last 20 minutes roast up nicely without overcooking. Zucchini sliced into half moons works well. Cherry tomatoes added in the last 10 minutes burst and add a juicy element. Red onion sliced and tossed in with everything else adds a sweet caramelized bite. Keep additions relatively similar in size to the other vegetables so everything cooks evenly.

- Preheat oven to 375 degrees
- Wash and cut baby potatoes into bite sized pieces, and bell peppers into slices
- Slice chicken sausage links into ½ inch pieces
- In a large mixing bowl, add all ingredients into bowl.
- Next add 1 stick melted & salted butter, then add ranch seasoning, garlic powder, onion powder, black pepper & salt to taste
- Mix until well combined and all ingredients have an even layer of butter/ seasoning mixture.
- On a large sheet pan (13x9 or greater), add all ingredients to pan. Lay evenly across pan.
- Bake in oven for 35-40 min or until potatoes are softened.
- Once meal is cooked, garnish with shredded Parmesan cheese





Family really liked it. Thought it could have used two packets of ranch seasoning as it lacked some flavor but also had quite a bit of potatoes. I also swapped out and used smoked sausage. Definitely an easy weeknight meal I will make again!
