EASY CROCKPOT SALSA CHICKEN
As a busy mom, slow cooker dinners are my go-to during the week when I'm needing to get dinner on the table, with minimal effort. I love how this only requires a few simple ingredients, and just takes a couple minutes to prep. My kids love when I make this slow cooker salsa chicken, and it's also great for leftovers. Family-Friendly: My entire family loves this recipe, and its a great way to add extra vegetables into the dish without my picky kids noticing. This slow cooker recipe has all the mexican flavors that make it so delicious!

- Chicken: Chicken breast is used in this recipe. However, you can also substitute for chicken thighs.
- Vegetables: Frozen street corn and green chilies gives that authentic mexican flavors that we all love! Can also add black beans, peppers, and onions.
- Cheese: Cojita and cream cheese provide the creamy consistency.
- Salsa: I used Mateo's salsa, however you can substitute for any preferred salsa.
- Seasonings: Taco seasoning packet and cumin.
HOW TO MAKE EASY CROCKPOT SALSA CHICKEN






In a crockpot, add all ingredients listed.
Cook on low for 3-4 hours or high for 2-3 hours. When the chicken is cooked, turn heat to warm. Remove chicken and shred it.
Next, place chicken back into crockpot, and stir until well combined.
Finally, serve with rice, salad, chips or burritos.
TIPS AND TRICKS
Leftovers: Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave until warmed through.
Cooking: This slow cooker recipe can be cooked on low for 3-4 hours or high for 2-3 hours. I like to cook it on low if I have additional time, because it helps really enchance the flavors.
Meal prep: This slow cooker salsa chicken is a great option to meal prep for the week. I love making this, especially when I have busy days planned.

Slow Cooker Salsa Chicken
Equipment
- 1 Slow Cooker
Ingredients
- 2 lb chicken breast
- 1 cup salsa
- 8 oz plain cream cheese
- 1 tablespoon white queso
- 10 oz frozen or canned corn
- taco seasoning packet
- 1 teaspoon cumin
- 7 oz diced green chilies
Instructions
- In a slow cooker, add all your ingredients into the crockpot.
- Cook on low for 3-4 hours or high for 2-3 hours.
- once chicken is cooked, turn heat down to warm, remove from crockpot and shred chicken.
- once chicken is shredded, place back in crockpot.
- serve with rice, chips, salad, or burritos.
- top with cilantro, cojita cheese and pico de gallo.
