This hot honey beef bowl is a quick and easy dinner that has quickly become a family-favorite of ours! Made with ground beef, street corn salsa, hot honey, and yellow potatoes, its ready in just 30 minutes! An easy weeknight meal that makes you craving for more!

Ingredients
Ground Beef Seasoning
1taco packet seasoning
1 tablespoontomato paste
1-2tbsp water
1 lb lean ground beef
3 lb Yellow Potatoes
1teaspoonpaprika
1 teaspoononion powder
1teaspoongarlic powder
1teaspoonblack pepper
salt to taste
1 tablespoonolive or avocado oil
Street Corn Mixture
110 oz frozen pack street corn/ canned sweet corn
2 tbsp mayo
1 tbsp sour cream
1 tbsp lime juice
¼teaspoonpaprika
¼ tsp garlic powder
1 teaspoonchili lime seasoning
small handful cilantro
small handful cojita or queso fresco cheese
salt to taste
Instructions
Preheat oven to 400 degrees
Dice up 3 lb yellow gold potatoes into small cubes.
Season potatoes with paprika, garlic powder, onion powder and olive oil.
Combine and spread evenly on 13x9 pan.
Bake potatoes for 30-35 minutes, or until crisp.
In a medium skillet on medium heat, cook lean ground beef. Once cooked, add 1 packet taco seasoning. Stir together.
Add 1-2 tablespoon water and 1 tablespoon tomato paste to ground beef.
Once it is well combined, turn off heat and set aside.
For this recipe, frozen corn was used. Heat corn based on instructions listed in package.
Once cooked, add paprika, garlic powder, chili lime seasoning, salt and pepper to taste.
Add mayo, sour cream, and lime juice.
Next, add small handful of cilantro and queso fresco cheese. Mix together
Prepare plate with potatoes, ground beef, and street corn salsa. Add lime wedge and cilantro for added flavor.
