This easy lasagna soup cooks ground beef, broken lasagna noodles, marinara, and beef broth in one Dutch oven then finishes with heavy cream, Parmesan, and mozzarella for a rich creamy lasagna-inspired soup ready in 45 minutes.

Ingredients
1tablespoonolive oil
¼cupyellow oniondiced
1tablespoongarlicminced
1lbground beef
1-2tablespoontomato paste
32ozbeef broth
1 24oz jar marinara
¾cupheavy creamroom temperature
10Dry lasagna shells broken apart
1cupgrated parmesan
8ozmozzarellacup
1teaspoonsalt
1teaspoonpepper
1teaspoongarlic powder
1teaspoononion powder
1teaspoonItalian seasoning
1teaspoonparsley
Crushed red pepper optional
Instructions
Add 1 tablespoon olive oil to dutch oven on medium heat
Add ¼ cup diced yellow onion, cook until translucent
Next add minced garlic and ground beef
Cook ground beef thoroughly until it is brown
Next add 1 tablespoon tomato paste, seasonings listed above, and mix together
Add beef broth, marinara sauce and bring it to a simmer.
Next break apart lasagna shells and add to dutch oven. Cook for 10-12 minutes.
Once pasta is cooked, turn heat down to low, and add heavy cream, parmesan cheese and mozzarella cheese
Let it simmer for an additional 10 minutes
Add dollop of riccota cheese on top with fresh parsley for garnish

Notes
Room temperature heavy cream is important here. Cold cream added to a hot soup can cause it to curdle or break.
Pull it from the fridge before you start cooking and it will be ready when you need it.
Break the lasagna sheets into rustic uneven pieces rather than uniform chunks. The irregular shapes make every spoonful look and feel more like actual lasagna in a bowl.
Don't skip the 10-minute simmer after the cheese goes in. That's what brings the whole soup together into something cohesive and deeply flavored rather than separate components in broth.
This soup thickens significantly as it sits since the pasta continues absorbing the broth. Add a splash of beef broth when reheating to loosen it back to the right consistency.
