Instructions
Make the burger sauce first. Combine the mayonnaise, ketchup, mustard, onion powder, garlic powder, pickle brine, diced pickles, salt, and pepper. Stir until smooth and refrigerate while you cook everything else. Chilling helps it thicken.
Preheat the oven to 375°F. Rinse and dice the yellow potatoes into 1-inch cubes. In a large bowl, toss with olive oil, garlic powder, onion powder, Italian seasoning, salt, and pepper until evenly coated.
Spread the potatoes in a single even layer on a greased 9x13 baking pan. Roast for 25 to 30 minutes until golden and crispy on the edges.
While the potatoes roast, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the ground beef and cook until fully browned, breaking it apart as it cooks.
Add the diced onion and minced garlic. Cook until the onion is translucent. Reduce heat to low.
Add the Worcestershire sauce, tomato paste, garlic powder, onion powder, paprika, ketchup, mustard, salt, and pepper. Stir until everything is well combined and the beef is evenly coated in the seasoning.
Assemble the bowls. Add the roasted potatoes as the base, top with the seasoned ground beef, shredded lettuce, diced tomatoes, sliced pickles, a generous drizzle of burger sauce, and a sprinkle of sesame seeds.
Notes
Make the burger sauce before anything else and let it chill while the rest cooks. The pickle brine loosens it initially but it thickens back up in the refrigerator into a perfectly dippable, drizzleable consistency.
Spread the potatoes in a single even layer with space between each piece. Crowding causes steaming rather than crisping and you want golden, slightly crispy edges on every cube.
The tomato paste and Worcestershire sauce in the beef are what make this taste specifically like a cheeseburger in a bowl rather than just seasoned ground beef over potatoes.
Assemble right before eating so the lettuce stays crisp and the potatoes stay slightly crunchy.
