EASY CROCKPOT MISSISSIPPI CHICKEN
If you've ever tried Mississippi Pot Roast, the flavors are truly a 10/10! This recipe works so well with different types of meat, so I decided a couple years ago to start making it with chicken, and it did not disappoint!

INGREDIENTS
- Chicken: chicken breast is used for this recipe. However, you can substitute for chicken thighs or chuck roast.
- Seasonings: Ranch seasoning packet and au jux gravy add the true "Mississippi" flavor of this recipe.
- Butter: Unsalted butter adds a rich, buttery flavor for the crockpot chicken.
- Vegetables: Pepperoncinis and pepperoncini brine are used.
HOW TO MAKE CROCKPOT MISSISSIPPI CHICKEN



First, in a 6 qt crockpot, add chicken breast, seasonings, butter and pepperoncini to slow cooker.
Then cook chicken on low for 4-5 hours, or high for 2.5-3.5 hours.
Once the chicken finishes cooking, shred it and turn the heat down to warm.
Serve with potatoes and vegetables.

TIPS AND TRICKS
Leftovers: Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave until warmed through.
Cooking: This slow cooker recipe can be cooked on low for 4-5 hours or high for 2.5-3.5 hours. I like to cook it on low if I have additional time, because it helps really enchance the flavors.
Meal prep: This slow cooker mississippi chicken is a great option to meal prep for the week. I love making this, especially when I have busy days planned.
Pepperoncinis: For this recipe, I like to add 5-6 pepperonicini's and half a jar of pepperoncini juice into the crockpot. However, you can adjust it based on flavor preference.

Slow Cooker Mississippi Chicken
Equipment
- 1 Slow Cooker
Ingredients
- 2 lbs chicken breast
- 1 hidden valley ranch seasoning packet
- 1 au jux gravy packet
- ½ stick unsalted butter
- pepperoncini juice
- pepperoncinis
Instructions
- In a slow cooker, add 2 lbs chicken breast to bottom of crockpot.
- add ranch & au jux grav packets.
- add ½ stick of unsalted butter
- add pepperoncinis and pepperoncini juice from jar. Please adjust based on your spicy preference
- Cover crockpot, and cook on high for 2.5-3.5 hours, or low for 4-5 hours.
- once chicken is cooked, shred chicken and keep in crockpot.
- add with mashed potatoes and vegetables.
