THE EASIEST TATER TOT CASSEROLE

This easy dinner recipe the most highly requested meal that my entire family asks for every single week. It's so simple to make, can be prepped in just a few minutes, and is picky eater approved! You really can't go wrong with these flavors. Easy to make ahead and keep in the refrigerator or prep, and keep in the freezer.

WHY YOU'LL LOVE THIS EASY CASSEROLE DINNER

Quick & Easy: This easy dinner recipe can be prepped in just 10 minutes, which is perfect for those busy weeknights. I use rotisserie chicken for this recipe to help save time. A low effort dinner that doesn't sacrifice any flavor.

Family-Friendly: Every single person in my family LOVES this meal! The flavors make this casserole so creamy and delicious. My kids never complain about anything when it comes to this meal, and that to me, is a win as a mom!

Freezer-Friendly: This casserole is a great option to prep ahead of time and keep in the freezer. This is one of my go-to easy recipes for any meal trains, family events, or making a meal for one of my postpartum friends.

INGREDIENTS

  • Rotisserie Chicken: I prefer using precooked or rotisserie chicken for this recipe, becuase it helps cut down on prep time without sacrificing any of the flavor.
  • Cream of Chicken Soup: adds a savory flavor and creamy consistency for the casserole dish.
  • Sour Cream: the cool, tangy sour cream cuts through and adds so much flavor to balance out the other salty notes.
  • Cheese: For this recipe I use monterey jack and sharp cheddar cheese.
  • Hidden Valley Ranch Seasoning: I love adding a packet of this seasoning into the dish to give it the ranch
  • Seasonings: The seasonings I used for this casserole bake include parsley, italian seasoning, oregano, and pepper.
  • Chopped Bacon: I use bacon bits for this recipe, however you can also make your own bacon ahead of time.
  • Frozen Tater Tots: The crispy, golden, crunch of these tater tots adds the perfect balance for the casserole.

HOW TO MAKE EASY CHICKEN CASSEROLE DINNER

First preheat oven to 350 degrees. Then combine cooked shredded chicken, cream of chicken soup, sour cream, ½ the amount of monterey jack and cheddar cheese, chopped bacon and seasonings into medium mixing bowl. Stir and combine together.

Next, spray the bottom of a 13x9 pan, and add mixture to bottom of pan. Spread evenly.

Then, add layer of the remaining half of monterey jack and cheddar cheese to the top of mixture.

Finally, add top layer of frozen tater tots evenly onto 13x9 casserole dish. Cover with aluminum foil and cook for 35-40 minutes. Remove foil and broil on low for additional 3-5 minutes or until golden brown on top.

TIPS AND TRICKS

Freezer-friendly: This recipe is a great option to make ahead and keep in the freezer to serve at a later time. I recommend prepping the ingredients up until it is time to place it in the oven to cook. Tightly cover and keep in the freezer until ready for use. When ready-to-serve, thaw in refrigerator overnight prior to serving.

Leftovers: Any remaining leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Texture of the tater tots will change the longer it sits.

  • 1 13x9 casserole dish
  • 1 medium mixing bowl

Ingredients
  

  • 3 cups cooked chicken
  • 1 10 oz can of cream of chicken soup
  • 16 oz sour cream
  • 1 cup monterey jack cheese
  • 1 cup sharp cheddar cheese
  • 1 cup chopped cooked bacon or bacon bits
  • 1 packet hidden valley ranch seasoning
  • 1 teaspoon parsley
  • 1 teaspoon italian seasoning
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • 32 oz frozen tater tots

Instructions
 

  • preheat oven at 350 degrees
  • combine cooked shredded chicken, cream of chicken, sour cream, ½ cup monterey and ½ cup cheddar cheese, chopped bacon, and seasonings to mixing bowl.
  • lightly spray 13x9 casserole pan, and add chicken mixture to bottom of bowl.
  • layer remaining cheese on top
  • layer frozen tater tots evenly to top of dish
  • cover with aluminum foil and cook for 35-40 minutes
  • uncover and broil on high for 3-5 minutes
  • add parsley for garnish
  • serve and enjoy!

Notes

Leftovers: If you have any remaining leftovers, they can be stored in an airtight sealed container in the refrigerator for up to 3 days. Can be reheated in microwave, however the texture of the tater tots will change the longer it has been kept in the refrigerator.
