This Italian Sausage Gnocchi Soup is the perfect cozy dinner for the colder months. Made with italian sausage, pillowy bites of gnocchi, parmesan cheese, and a flavorful broth. It's rich, creamy, and the most delicious soup to make for your family! This is by far my favorite soup to make. The flavor is absolutely incredible!

- mild italian sausage
- yellow onion
- spinach
- gnocchi pasta
- minced garlic
- chicken broth
- heavy cream
- grated parmesean cheese

- crushed red peppers (optional)

HOW TO MAKE ITALIAN SAUSAGE GNOCCHI SOUP
- In a dutch oven on medium heat, add olive oil to pan with diced onions.
- Once the onions have become translucent, add minced garlic and italian sausage.
- Once the italian sausage has been cooked thoroughly, add seasonings, and tomato paste.
- Stir seasonings to combine, then add chicken broth.
- Once the mixture begins to boil, add gnocchi. It should take about 2-3 minutes to cook the gnocchi thoroughly.
- Once the gnocchi is cooked, turn the heat down to low, add heavy cream and grated parmesan cheese.
- Add chopped spinach, and then you will place the lid on the pot and let it simmer for an additional 10 minutes to enhance the flavors and thicken the sauce.
TIPS AND TRICKS
Cheese: Shred your own cheese if possible- freshly shredded cheese melts smoother than pre-shredded cheese.
Italian Sausage: If you do not have italian sausage, you can substitute for ground beef, ground turkey or ground chicken, if desired.
Broth: For this recipe, I used chicken broth. However, you can substitute for beef broth or bone broth for added protein.
Spinach: If you do not have fresh spinach available, you can use frozen spinach. However, I recommend letting the frozen spinach thaw and then squeeze excess water from the frozen spinach to prevent excess water in the soup.
Vegetables: you can add other vegetables to this soup, such as peppers, mushrooms, carrots or celery.

Italian Sausage Gnocchi Soup
Ingredients
- 1 lb mild italian sausage
- 1 yellow onion
- 1 lb mild italian sausage
- 1 yellow onion
- 1 bag of spinach
- 1-2 tablespoon minced garlic
- 2 cups chicken broth
- 2 cups heavy cream
- 3 oz grated parmesean cheese
- ½ teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon italian seasoning
- 1 teaspoon oregano
- 1 teaspoon parsley
- 1 teaspoon garlic & onion powder
- 1 teaspoon crushed red peppers optional
- 16 oz dry gnocchi pasta
- 1 tablespoon tomato paste
Instructions
- Add olive oil to medium heat pan, cook 1 diced yellow onion until translucent
- Add minced garlic and combine.
- Add 1 lb mild italian sausage
- Once cooked, add seasonings (salt, pepper, italian seasoning, parsley, oregano, garlic powder, onion powder & crushed red peppers, and tomato paste.
- Add 2 cups chicken broth
- Once mixture is boiling, add gnocchi. cook for 2-3 minutes,
- Turn heat down to low and add 2 cups heavy cream
- Stir in 3 oz grated parmesean cheese (can substitute for romano cheese)
- Add diced spinach to pan.
- Let it simmer on low for 10 additional minutes to thicken sauce.
- Serve and enjoy!
