  • 4 cups cooked chicken breast or rotisserie chicken
  • 8 oz softened plain cream cheese
  • 1 cup sour cream or greek yogurt
  • 1 packet hidden valley ranch seasoning
  • 1 cup franks buffalo hot sauce
  • ½ cup ranch dressing
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper
  • Salt to taste
  • 8 oz Colby jack cheese freshly shredded
  • 8 oz mild cheddar cheese freshly shredded

Method
 

  1. Preheat oven to 350 degrees
  2. In a large mixing bowl, combine cooked & shredded chicken breast, softened plain cream cheese, sour cream (or greek yogurt), buffalo hot sauce, and seasonings listed above. Mix until well combined.
  3. Next add 4 oz Colby jack and 4 oz mild cheddar cheese into mixture.
  4. Spray bottom of 9x9 pan with non-stick cooking spray, and add chicken mixture to bottom of dish.
  5. Spread evenly, then add remaining cheese to top of mixture.
  6. Bake for 20-30 minutes, or until the cheese has melted and the sides are starting to bubble. Broil for an additional 2-3 minutes or until top is golden brown.
  7. Remove from oven, top with green onions for garnish.
  8. Serve with tortilla chips, vegetables, crackers, or with tortillas to make a wrap.

Notes

  • The cream cheese must be fully softened before mixing. Cold cream cheese will not blend smoothly and you will end up with lumps throughout the dip no matter how long you stir.
  • Frank's Buffalo Hot Sauce is specifically recommended here. It has the right balance of heat and tang that makes buffalo chicken dip taste the way it should. Other hot sauces can work but the flavor will be different.
  • Freshly shredded cheese melts significantly better than pre-shredded bag cheese. The anti-caking agents in pre-shredded prevent it from melting into the smooth, gooey layer you want on top.
